Job Title: Chef Tournant / Kitchen Supervisor
About the Role:
We are seeking an experienced Chef Tournant to supervise kitchen operations, maintain food quality and consistency, and support the culinary team. This role requires strong leadership, culinary expertise, and the ability to work efficiently across all kitchen sections in a multicultural environment.
Key Responsibilities:
- Direct, coach, support, and evaluate kitchen staff alongside the Sous Chef.
- Maintain thorough knowledge of culinary terms and company recipes, ensuring consistent taste and quality.
- Work efficiently in all kitchen sections (Sauce, Entremetier, Fish, Roast, Outlet CDP, Tournant, Cold Kitchen).
- Coordinate and supervise team members, delegate tasks, and oversee food production.
- Conduct daily recipe reviews and maintain recipe documentation.
- Handle special requests such as show plates, food samples, and tastings.
- Control production levels, recommend cost improvements, and prepare daily food requisitions.
- Ensure compliance with Public Health standards (US, Anvisa, Shipsan, Canadian, Australian, etc.) and HACCP guidelines.
- Maintain kitchen readiness for inspections.
- Follow company policies on appearance, hygiene, and punctuality.
Qualifications and Education:
- Minimum 5 years in upscale hotels, resorts, cruise ships, or banquet services.
- At least 2 years as Chef Tournant, preferably with shipboard experience.
- Culinary school degree is required.
- Strong management skills in multicultural and dynamic environments.
- Excellent communication, problem-solving, decision-making, and interpersonal skills.
- Proven customer service, team building, and conflict resolution abilities.
- Knowledge of personalized service standards and guest satisfaction techniques.
- Skills in planning, coaching, organizing, staffing, controlling, and evaluating.
- Intermediate computer proficiency.
- Basic understanding of accounting principles and report writing.
- Ability to liaise with senior officers and corporate office professionally.
