Job Description
We are seeking an experienced Chef Tournant to oversee and maintain food quality and consistency across multiple kitchen sections on board. This role includes supervising culinary team members, ensuring adherence to recipes and public health standards, and supporting daily kitchen operations. The ideal candidate is a strong leader with exceptional food knowledge, problem-solving abilities, and experience in a high-volume, multicultural environment.
Key Responsibilities
- Supervise and coach kitchen team members; evaluate performance with the Sous Chef
- Maintain consistency and quality of food preparation as per company recipes and standards
- Rotate through all main kitchen sections, ensuring optimal productivity and food safety
- Organize daily recipe reviews and maintain clean and updated recipe folders
- Manage production levels, suggest improvements, and ensure cost efficiency
- Prepare daily food requisitions; verify accuracy of deliveries
- Implement and monitor HACCP and public health standards (USPH, Anvisa, Shipsan, etc.)
- Conduct show plates, food tastings, and prepare food samples as needed
- Follow proper grooming, hygiene, and uniform standards at all times
Qualifications and Skills
- Minimum 5 years’ experience in upscale hotels, resorts, cruise ships, or banqueting services
- At least 2 years’ experience as a Chef Tournant (shipboard preferred)
- Culinary school degree required
- Strong leadership and team management in multicultural settings
- High-level communication, decision-making, and conflict-resolution skills
- Understanding of personalized service standards and guest satisfaction practices
- Familiar with kitchen accounting, stock control, and food cost management
- Intermediate computer skills; report writing ability and basic accounting knowledge
